Chickling vetch

Chickling vetch is one of the oldest legumes eaten by our ancestors. Its cultivation had been lost in past years and then it was reintroduced in the Alta Murgia and Matera areas and became the keystone of a recovery and valorisation project. Its flavour is unique and it is an ingredient suitable for various dishes, such as soups, creams, salads and delicious side dishes that recall an ancient flavour.
